Light & Fluffy Whole Wheat Waffles

Light & Fluffy Whole Wheat Waffles

1-1/2 cups whole wheat flour
3/4 tsp. salt
2 tsp. baking powder
2 eggs separated, whites whipped stiff
1-1/4 cups milk
2 Tbsp. sugar
5 Tbsp. oil

Stir flour, salt and baking powder together twice. Beat egg whites until stiff in separate bowl. In another bowl, beat egg yolks until light and fluffy. Add milk, sugar and oil to egg yolks, then add to dry ingredients. Stir until just blended. Gently fold in stiff egg whites with a rubber spatula.
Grease waffle iron and bake about 2-3 minutes. Makes 10 waffles on my 2-waffle iron.
